Just tried Zork Nemesis on MS-DOS.
Entered the following lines before running ZORKDOS (because UniPCemu has no 387 or any FPU for that matter):

set GO32=emu D:\emu387
set 387=N

Should that be enough to get it to run without a FPU emulated by the emulator itself (using emu387 instead)?
Got a exception 07 without the "set 387" line at least.
That's immediately after rendering the mouse cursor (some kind of anchor) followed by a greyish rectangle drawn around it.

It keeps crashing in the same way:

Edit: The 387 environment variable has no effect on it it seems?

Just tried Magic Carpet. Turning on Anaglyph 3D mode looks right (blue and red overlay in the right locations, running in RGB565 16-bit color mode), but don't have anaglyph (red/cyan) glasses to verify.
It's third (3D) display mode is probably fine too, but can't verify it's results either. That one is back in 256 color mode.
