Unfortunately this ESS datasheet does not define any sort of suffixes to the chip part number.
With other manufacturers, the suffix (-F, -FC, etc.) can mean anything from revision to timing to packaging type.
Best guess at the moment is it may mean chip package type, but I'll take a look at other ESS datasheets to see if they may have a generic suffix scheme defined somewhere.
Most likely, any sort of variation from ES688F to ES688FC will not matter to you at all. The big differences is usually when the actual number changes.
