Final Fantasy 7 uses MIDI music.

It sounds particularly good when played on Yamaha XG hardware such as a YMF7x4 sound card or a MU100 external MIDI module. And I do mean actual hardware, not the laggy XG soft synth which shipped with the game.

Hexen II can be set to use MIDI (which I prefer) instead of CD Audio.

Age of Empires (it's on the list in the link above) has very immersive MIDI. One of my favorites.
