I'll kick it off with Descent 2.
[edit] Just looking over the list of DOS Glide games, I can also add:
- Blood (although the "acceleration" is pointless and not worth the bother)
- Carmageddon (although choosing MIDI over the redbook OST for this game would just be silly)

Yeah, there were certainly some, like EverQuest. Not many overall, in Murica though. Good MIDI hardware just wasn't widespread outside of Asian markets, where the hardware modules were readily available. Technically, DirectMusic (component of DirectX) utilized MIDI, but so much is unknown about how that was ever used in the end. The only titles I know of that did use it were Monolith's SHOGO, BLOOD 2, and Sanity. That's why we have the Microsoft GS Wavetable Synth in Windows, still to this day, as Microsoft licensed it for use in what they were developing with DirectX.

Descent and Hexen2 seem to be the most interesting ones. Hexen2 in particular as it uses Quake engine, yet Quake used redbook audio.
