I have a motherboard with a YMF740C on-board. This is the cut down version with the lowest number of voices. Does anyone know if any other other YMF chips are pin-compatible? I'm curious as to whether I can upgrade my motherboard by swapping it out for a more featured chip.

YMF724 is mostly pin compatible but it adds µWire EEPROM support and also supports some Yamaha specific CODEC chips not just AC97, while YMF740 only has AC97 and no EEPROM support since BIOS already knows what to conf up etc.

I don't know if swap of the chip will allow things to still work as far as BIOS is concerned but it can be worth trying, there isn't gonna be any catastrophic failure that will cause hardware destruction.
