I have a few Intel coolers, ones with the black anodised heatsinks. I know these are used for plastic package chips, but can they also be used for ceramic package chips?

Should be fine. I've used those types of heatsinks with ceramic processors. I usually just put a bit of thermal paste to ensure proper contact between the heatsink and the processor.
