I use ATX2ATConverter during testing devices. https://x86.fr/atx2at-smart-converter/
Problem is for when you need use it with higher power consumption like PPro build or more cards.
Are there good alternatives for such cases?

It all depends on the +5 rating of the ATX PSU, what is it?

On my Dual P-III the maximum +5 is 18.125 amps which is more than my PPro.
