Here are a few. Mostly Windows 3.1 but you said you were looking for those too. The rest are on a computer in my basement-- I'll get them soon.
Most of this stuff has been tested by me in my own tech adventures, but some of the other ones I have are for hardware I just don't have but I picked the drivers up for anyway. I've marked what I know about these if applicable.
Windows 3.1:
ATI 3D Rage / 3D Rage II chipset video cards
Cirrus Logic GD5428 (from Packard Bell restore disc, untested)
Cirrus Logic GD5430 (from Packard Bell restore disc, untested)
Cirrus Logic GD5434 (from Packard Bell restore disc, untested)
Ensoniq AudioPCI
Ensoniq SoundscapeVIVO (Unsure if this is the same as the VIVO90-- my card is from a Gateway machine and has OEM markings)
ESS Solo-1
Intel 810 chipset video (Works on Compaq Presario 3550 and Deskpro EN, untested otherwise. If installed on a system that also has the Network Everywhere NC100v2 drivers below installed, Windows won't boot until one of them is removed-- I'm not sure if it conflicts with other network cards or just that one)
Netgear FA311v1 10/100 Ethernet Adapter (official driver disk package-- also contains drivers for Linux, DOS, Netware, SCO Unix, and NDIS3/4/5, which I believe means NT3/4 and Windows 9x)
Network Everywhere NC100v23 10/100 Ethernet Adapter (another official driver package- contains DOS, FreeBSD, Linux, MS Lan Manager DOS or OS/2, generic NDIS driver, Netware 3/4/5, packet driver, SCO Unix, Windows WfWG3.11, 95, 98, ME, 2000, NT3.51 and NT4)
S3 864
S3 Trio64 (official package containing W3.1, 95, NT3.51, NT4, OS/2 and some utilities)
S3 Trio3D/2X
Voyetra Sound144AM (OEM Packard Bell card, which is apparently a rebranded Aztech Sound Galaxy Washington 16 if Windows 95 is correct-- package contains some useful audio software! I'm working on extracting the software so that you don't have to install Voyetra drivers to use them)
There are a bunch here but I have a feeling you've been there already.
Windows NT 3.51:
Ensoniq AudioPCI (didn't work for my ES1371 card, your mileage may vary)
Intel 810 chipset video
Netgear FA311v1 10/100 Ethernet Adapter (see Windows 3.1 section for package)
Network Everywhere NC100v2 10/100 Ethernet Adapter (see Windows 3.1 section for package)
S3 Trio64V2
