I've successfully installed my old GUS ACE and was wondering what sound settings I should use in the setup program for games such as Doom 2 and Blood.

In Doom 2, I have only one option:
Number of Sound FX to mix (1-8)

In Blood, I have two options:
Number of Voices (4, 8, 12, 16, 20, 24, 28, 32)
Mixing Rate (8 Khz, 11, 16, 22, 44)

Are my choices restricted by how much memory is on the GUS (the Ace has 512KB)? Any reason not to go as high as possible on the settings?

GUS maximum polyphony depends from the sample rate. 44.1KHz=14 notes etc. Up to 19.2KHz=maximum valuse, 32 notes. Hardware limitations.
And stereo sound=2 notes.
So - you can use 32 voices with 44.1 KHz quality only with InterWave.

Don't think either of these games support hardware mixing on GUS. They use it just as a stereo wave out device, so GUS RAM isn't a factor.

Any channel/mixing rate options will just affect CPU usage, e.g. more = slower.

Don't those games work with GUS via DosBOX? I'm not positive, I just remember being amazed at the Star Control 2 GUS soundtrack.

OK, if I understand you correctly, does that mean that I will hear the same sound effects regardless of the number of Sound FX (Doom 2) or Voices (Blood) that I select?

No, just that it will work exactly the same way as any other soundcard. No benefit from using a GUS for sound effects in these games.
