This is my first time using DOSBox and i'm not sure what to to with my game files. I'm trying to get RogerWilco: The Next Mutation to run but i'm not sure what files should be in the folder for the game.

You need to mount the game's folder or it's parent, as a hard drive. Check the readme 😀.
