Watch some youtube comparison videos.
AdLib is great for FM games but if said games also offer a General Midi / Roland GS soundtrack then the difference is vast.
Also it depends on your system, on a XT~286 a Sound Canvas is not that important. Maybe you can get a cheap Dreamblaster S2 and see if your games take advantage of it, then you can go the X2 way, or SC-55 or whatever, the sky is the limit 🤣
It's a decision you need to make for your self, just watch some yt videos.

AdLib is a different thing compared to the likes of a SoundCanvas. It’s a matter of taste and interest. I have recorded a fair amount of different sound cards: AdLib, Tandy, CMS, SC-55 and MT-32. you can watch quite a few games with different sound cards on my secondary channel:

Some games like Tyrian sound best with AdLib, some will sound best with an MT-32. But again: it’s also very subjective.

Do you need one? No. Should you want one? Oh yeah 😀 Game music sounds completely different between AdLib and Sound Canvas. There's plenty of "AdLib vs Sound Canvas" youtube videos.
