I've picked up an excellent conditioni Deskjet 960c which support PCL3.

Am I correct in assuming that it should work decently when selected as a Laserjet I or II in an MSDOS app?

I'm pretty sure the HP printer protocol is more or less universal.

Yes (I did it with a Deskjet 520) but look carefully the status of the printer. If the waste tray (the purge?) overfills it can spill ink over your desk... and it can not be cleaned.

I have traveled across the universe and through the years to find Her.
Sometimes going all the way is just a start...
