I installed Gabriel Knight 2 a couple weeks ago, it plays ok, but does freeze screen and sound for a second every so often. I also plan to play around with Phantasmagoria 1 & 2. Will Dosbox/DeFend help with the jerky play, and do I need to uninstall GK-2, and reinstall it using DosBox/Defend ?

DosBox should fix that, yeah. You shouldn't need to re-install the game, but you might need to run the setup or install program to change sound settings. You could also try VDMSound which improves sound-support and timing under the inbuilt Windows-DOS.
