I have a very nice Sony Multiscan 200PS, the previous owner wiping it with too much energy has taken away part of the anti-reflective film in the center. How do I now remove it all to make the screen uniform? I don't have strong direct lights so I don't think I have a problem using it without film.

If it is anything like the old lcd screens, you can take a damp cloth and let it sit on there and it will soften the coating so you can get it off. Not a quick process by any means. The last very small Sony laptop I did that on took about 3 days to get everything off.
