What computer specs do you have (CPU speed)? What cycles do you use? For games of the point & click era (the ones you listed) a cycle amount of 8000 works best for speed/compatibility. If you still get choppy sound, it might be because your CPU isn't powerful enough.
After about 2 hrs of tweaking different setting I finally have most of the games working except PQ1 cant get to to stop using the PC speaking for sound!!
The AGI version of PQ1 was PC-speaker only on PC's. There is 3 voice PCjr/Tandy music, though. Change dosbox.conf to have "machine=tandy" instead of "machine=vga".
The SCI version of PQ1 should have support for music cards. Try AdLib first, which should work with DOSBox. If you've configured your system properly, it should also work with General MIDI support (possibly by selecting the Roland option in the installer if it doesn't have a GM driver).
