I tried capturing a fair bit from Under A Killing Moon, and even with the video set to original and no scalars, the text for subtitles is slightly messed-up.

What I'm wondering is whether the problem lies in the ZMBV codec, or DOSBox's internal encoding. Under A Killing Moon does run using a VESA resolution (of 640*480*8bpp), so perhaps the capture of frames for encoding is buggy?

I've also tried Stargunner, and that has messed-up text if scalars are enabled (it also uses a VESA mode, this time of 320*240*8 ).

And, surprise, surprise, the red and blue are switched in playback of both recordings under x64 Windows.
