When I launch the game, it says:

Using 2000K of EMS will add more music and sound
set FILES=30 in your config.sys

newest DOSBox, no tweaks as of yet.

Tells me "Using 8000 KB EMS will add more Sound and Music, set FILES=30" and returns to DOS Prompt.

Where can I set the "FILES" parameter for DOSBox?

No need, I'm running it as I write this under DosBox 0.74 official, no problems at all.
You can't adjust the files parameter.
Is EMS turned on in the .conf file?
Is the game configured properly?
