I've succeeded in getting TIE Fighter (CD version) to run in DOSBox 0.74. It runs very smoothly in flight for a minute or two at a time, then the framerate falls drastically. If I press escape to go to the menu, then go back to the mission, it returns to normal performance. After another minute, the framerate falls again.

I've played with the core and cycles settings, and with the in-game options, but nothing's helped so far. Any suggestions?

"Playing" is a bit vague, please post the settings you have tried.
For starters, you should set core=dynamic and cycles to a fixed value (e.g. cycles=20000). You can also try cycles=max.
