My Abit BH-6 has an option to lower the CPU Operating Speed 800(100) down to 233(66), or if I want to stay at 100 bus speed to 300(100).

Should I do it for my DOS games?

You can't change multiplier on Pentium 3.

Can I install my P2 CPU instead for those speed sensitive games?

You can look into VIA C3 if you want another highly tuneable option for your board.
