Incidentally, DOSBox's (and Boxer's) default cycles=auto and core=auto settings result in normal core and 3000 cycles for most Sierra games, but Gabriel Knight's protected mode kicks it up to dynamic/max. I've tested with my own (floppy-disk) copy of Gabriel Knight, and the Day 5 freeze does occur in both Boxer and in the standard DOSBox 0.74, on Mac and Windows. Have you tried increasing the frame-skip? This setting skips every n frames, which can smooth out stuttering graphics and sound if the emulator otherwise can't keep up.
