Given that the deschutes 350 & 400 were released simultaneously, id go with either of the following; 8mb TNT 8mb V2 Banshee G200 My Deschutes 400 was running the high-end parts of the era, ie: V2 12mb sli & 16mb TNT. Then I decided to go a Katmai 500 for that rig.

Server 03 is a bit new to be running on that Athlon system. Especially with only 768mb of RAM, it would be very demanding on an old K7. Might want to look at a K8/P4 system with 2gb RAM if you insist on using Server 03. Win2k would be more suitable for a rig like that Athlon.

Never have been fond of the idea of running atx2 or newer on an atx1.x spec or older board. 5v & 3.3v power on newer psu's is pretty weak, plus there is the absence of -5v as well. I always run refurbished period-correct psu's for my older systems.

The AXP is retro IMO. Nothing technical about my reasoning, just my own personal cut-off point. Like 478 P4s. @Skyscraper: Im running an Abit NF7 with a XP3000+ @2100MHz & a 9800pro without issue. But then it does have the 12V port for the CPU which would take some of the load off.
