I don't know if it meets your demands, but Red Baron 2 (3D) is pretty hard to beat when it comes to WW1 sim. I'm not talking about the flight model, but the overall feel of the campaign and randomness of events. Falcon 3.0/4.0 is pretty much the only thing that comes close.
