Since it says "games list" I think I can add something towards the "zoom out" part. Roller Coaster Tycoon can be run in any resolution in window mode. It will start in whatever is set in the game, but can be pulled bigger as far as the screen goes.

Should be possible to get the DOS mode in the boot menu. Similar to what 98 does. Entrys like "normal start", "safe mode" "command line only", "command line with netwirking", etc Those later entries is what you want.

You also might take a loop at PloP boot manager, it can run from a cd or floppy and initiate boot from basically anything, including USB on ssystems that don't natively subbort boot from external media. All it takes is for the drive to appear in the list (as in the BIOS has to recognise it)
