The Intel HM76 supports 4 SATA I/II ports, and 2 SATA III ports. The particular laptop you list appears to only have the SATA II ports connected to the chipset, from what I can find in a few specification documents and online reviews. This is actually pretty common to see in home/office/budget …

Looks like a generic clone. (unless previous owners removed stickers) Retail manufacturers would put labels on them.

Installed a new CD-ROM in my Pentium 75MHz machine. I was hoping the aqua turbo button would match the power button, but close enough.. 😀 Maybe I'll plasti-dip the power button if I can find the right color.

No, but you could accomplish the task a lot easier in different ways. There are various 5.25" bay and 3.5" bay LCD/VFD modules that work with both serial and USB you could use. If you're dead set on using a Raspberry Pi, you could just hook it up via serial and have the retro PC send the data …

I think GX100 and GX110 had different riser layouts than the previous GX1, GXi, GXa... so you're stuck with PCI on that. A PCI/ISA riser for the GX100/110 actually does exist , but is apparently very rare.. My search for one continues.. I have a ton of those risers at work since we used the GX100 …

You could ask Advantech what the differences are. They're extremely helpful and always have provided me with quick answers when I call their technical support. They have a good engineering staff with pretty thorough documentation.
