A game I'm installing detects FILES=7 and wants it set to 60 in config.sys. How do I change this?
You debug it, and fix it.
You create CONFIG.SYS file with FILES=60 and put it in your DOSBox C-drive?

If the game is Alien Logic, there are a few posts about the issue in these forums; and from what I gather the message is a warning that can be disregarded because DOSBox actually supports a good deal more than 60 simultaneously open files.

I tried searching for FILES=60 as well as FILES AND 60 but I got every post with the word file in it. Alien AND Logic AND 60 gives me a more manageable list of topics. Thanks for the suggestion.
A search on "jorune" is more selective. Also, Google is a bit better for exact phrases if you use the advanced search and limit the domain to these forums. 😉
