DOSBox already seen the work on PSP (PlayStation portable), Palm and some old smartphone with Windows Mobile!
so come on behalf of all lovers of the PlayStation 2 ask ...
you already have or you could develop a DOSBox to run on the PS2?

put the executable of the PSP and "EBOOT.pbp" and the PS2 is "Boot.elf"
search on google "DOSBox for psp" the file is very small!

Well, if the file is so small, and the PS2 is so similar to the PSP (which it isn't, but i doubt you'll understand the difference), then go ahead and port DOSBox to the PS2. Good luck.
Maybe there's some pre-compiled version around, i don't know. If you want
to get your hands on getting it working on your own, start off with the SDL
port (assuming there's one available) and test that in-depth before heading
to the dosbox part.
