Very subjective of course, but I would go for a Pentium 200 with MMX just to play Pod. 😉
Don't forget the Quantum Bigfoot and a Zip drive.

How about an ALadin Pro II motherboard. A Pentium 2 motherboard that will run at 100mhz FSB and uses EDO
Its a total turd but might be an amazing overclocker,
I am thinking Pentium 300 or 333.
Pentium 300 is the fastest choice you can go for if you want 1997 period correctness
Okay, I picked up an Intel motherboard and Pentium ll 300.
I just need a good video card and sound card ?

RIVA 128 or a Matrox Millennium II would be what people would most likely install in 1997.
AWE64 GOLD probably the best soundcard for that year.

Yes, the Riva 128 and AWE64 is what I was considering too. But I think I want something more exotic.
