Were there ever any keyboards that used a serial interface? I found a PS/2 to serial converter but I'm not sure how well that would work in practice or if DOS would even see it.

Well, strictly speaking pretty much all AT and PS/2 type keyboards use a serial interface. Serial rs232 keyboards also exist. They're called teletypes.

That converter was probably used to connect mouses. Even if you find a serial keyboard (didn't they use RJ11 connectors?) it probably won't work.

If I'm not mistaken, there were real ASCII keyboards in the late 1970s. Like serial terminals without screens.
Early CP/M machines had them interfaced with the Z80-SIO, while video was generated on a separate board.
