I have been looking for a fairly priced UMC U5S-SUPER40 for a long while now without success.

I do have a U5S-SUPER33 though. Are these chips good overclockers? How wise would it be to just set it to 40MHz FSB and pretend it is a SUPER40? And do 40MHz U5S chips require heatsinks? (I would think not.. but still..)

If you're satisfied with that, what would be the problem? And If you're OCD purist, you woudn't ask that question.

Are these chips good overclockers?

From my experience, vanilla Intel DX33 works fine at 40Mhz. So just try it.

And do 40MHz U5S chips require heatsinks? (I would think not.. but still..)

Adding heatsink will improve your chances of stable work with overclocking.

I'm pretty sure all the "33"'s can do 40 MHz without a problem, the UMC's run really cool and most of the chips I have seen have been marked as 33/40. Never had to add a heatsink to one, thats for sure.

Second that. To be on the safe side, I would just put a heatsink on.
