I am trying to test out a Socket 423 to 478 adapter I have before probably selling it. What is best thing to use for cooling on it? Due to the adapter and 478 P4 Chip making it higher, a normal cooler that I can clamp down on both sides of my TH7 RAID motherboard wont work or will put way too much pressure on the chip.....

Can you unscrew the heatsink bracket on the motherboard and then put it back together with longer screws and some kind of spacer (washers, cut BIC pen, random chunk of plastic with a hole in it etc...) so that the bracket sits higher?
In case, put a couple layers of electrical tape on the board beneath the spacers to avoid to scratching it and ruining traces.
