Hello everyone... This could be a very stupid question but I can't really find a clear answer on the net so I thought of asking here. I have a SC-55ST. Is it ok to take an adapter from an old modem with the same voltage but different polarity, cut and swap it's cables and use it to power the Roland?

What do you mean wrong polarity, the Roland adapter is 9V DC, Modem adapter is 9V AC unless you know something it does not say in the picture.
Connecting 9VAC to 9VDC input can break it!
I use for my MT-32 one of those universal adapters with selectable output voltage (or you can choose a fixed 9V one if just for this Roland module) and interchangeable pins (also reversible polarity) that you can get on ebay. Very handy.
