In Windows 7, there were multiple programs that made removing a file extension association really easy.
Like this one here: http://www.winhelponline.com/blog/unassociate … indows-7-vista/

However, I have not been able to find a tool that does the same thing for Windows 10 (and works).
Does anyone know?

It does, but it is broken and does not work.
You see, windows 10 broke something that was working perfectly fine in windows 7 and that is file associations.

I don't know if they fixed it in a later update.

Windows does not have a disassociate extension type function anyway. Well, maybe it does, I just couldn't find it.

I found a program that lets you associate or disassociate files. And also, it lets you change the icons too.

Agreed, this has been irking me for a while. They purged out the tools that once let you edit associations appropriately, so now setting up anything but the most basic open a file type with this program associations requires careful registry tweaking. I struggled for a while trying to work out how to set Paint.net as my default to "edit" images, and have yet to try to restore the setup since my past reinstall.

If someone can suggest something to allow more full file association editing that works with Windows 10 it would be very appreciated.

A free program called "Types" can change the default file associations, can change file icons and even put new "open with (program)" on right click.
It works with Windows 10, I discovered it today after searching for it a while.

Never used Windows 10, but in older versions, you could remove an association with the command line. Open a command window and type;

assoc .ext=

Replace ".ext" with whatever extension you want to remove. Make sure you type the right one because if it works, it won't ask for confirmation, it just instantly removes it.
