I remember as a kid walking into various computer stores, there would be kiosks running looping demos either promoting software, games, or the machines themselves.

What are some of your favorite ones? (CGA/EGA/VGA) ?

Memorable ones:
Aquarium programs (from CGA upward)
Flying Windows (especially during the Win3.1 era)
Doom's demo cycle (a big deal in '94)
Win95B+ 3D Text of their CPU+MHz
Quake's demo cycle
Incoming's demo cycle

Future Crew's Second Reality megademo from 1994.
As stated above, definitely the Doom, Quake 1/2/3 Arena, Duke3D demo cycles.
Test Drive or Stunts.

I recall seing the Wing Commander IV intro in stores, although not technically a demo, it definitely showcased what a CD-ROM could store.
