How to set it up? D3D based games through Voodoo has normal colors and some Glide games are too bright, often, any way to correct it?

There should be a 3dfx specific tab with the option to adjust Gamma in the display properties tab for the card, or you can set the environment variables in AUTOEXEC.BAT at startup.

https://www.mdgx.com/3dfx.htm

Look for "Gamma" in the SST_ commands.

Example: SST_GGAMMA (Green Gamma) or SST_GAMMA (Global Gamma)

and so on.

I think you can also set these options on the fly in windows, e.g. have a batch file to set various SST variables then call your games exe... at least thats what i do with quake and quake2 😁
