Hello,
has somebody any good advice for the best way to steer the plane?
The 1990 game Su25 from Electonic Arts has a great flair, but a bad reputation for an over-sensitive steering.
I tried it with keyboard, mouse (hi-res and normal setting) and Joystick (Gravis Thunderbird on a USB-gameport-adapter).

But I'm not able to control the plane in a reasonable way. It always stalls and tumbles as soon as I try to fly a curve.

According to my experience (36 hours) of flying real airplane:
1. Keep an eye on airspeed. Don't let airspeed drop below stall speed +10 kts.
2. Too much bank. Try turning with not more than ±15° of bank.
3. Don't pull so hard on a stick.
4. 60° bank turn pulls 2g's. The more you pull the more speed you have to have.
5. Don't slip. Keep the ball on a turn coordinator centered. Reduce slipping with the pedals.

Nope. Just couple of piston experimental ones. But the principles are the same.
As you stall the fighter jet (that is designed to withstand much harder manoeuvring than light sport aircraft) then you certainly make one of the mistakes I described above.
