I get a message that says that it requires support for 16 color mode. I'm using the three-disc version from 1999.

That won't help him. Windows 7 64-bit does not have compatibility for 16 bit, but there is an unofficial patch for Sierra fans. As I am not involved I cannot vouch for it, but it worked on my computer. If links are allowed, go to :

This has patches to make all the Gabriel Knight games work on Windows 7 64-bit. It was a life saver for me although I haven't play tested the entire games with them, but they do work now.
