I have a choice of 2 of the following 3

A Gravis Ultrasound

A Roland MT-32

A Creative AWE 32 w/ Yamaha DB60XG Clone

What would I be best off with starting out?

Definitely the MT-32, and then maybe the AWE32+DB60XG. You'd get MT-32 + MPU-401 General MIDI capability with that setup I think.

Personally I have an MT-32 and SC-88 external synths and I use them with DOSBox via a USB MIDI cable.

Thanks for the opinion, being that I'll want the AWE 32 anyway for compatibility, and the MT-32 is just awesome in general that's likely what I'll do.

🤣, Well if it hadn't have been for myself amassing a fair bit of spending money and the fact I've come across some awesome deals on this I couldn't have done it! 😀
