I'm pretty certain "yellowing" is caused by a flame retardent chemical in the plastic mix that reacts with oxygen over a period of time (usually a few years). It cannot just be sunlight as i've got old C64's, Amiga's, Macs and PC's stored in a dark dry loft and a few have gone yellow! And i don't smoke either 😜.
Though sunlight certainly helps, i.e. in a computer room of a school these close to the window are more yellowed than the others further away.
