The "enable MT-32 mappings" option? That's for using a GM or GS MIDI device (like a Sound Canvas) or a software SoundFont synth to play MT-32 games. It just rearranges the GM instruments to make them sound similar to the default MT-32 instruments. It kind of sounds correct with games that only use the default MT-32 instruments (like Monkey Island 1,) but games that program the MT-32 to produce new sounds (like Monkey Island 2) will sound broken. You cannot program GM/GS MIDI devices to produce new sounds like you can an MT-32.
Long story short: it's not recommended. That option was useful back when MT-32 emulation wasn't a thing yet. It's still there for historical reasons.

Yeah, Munt is absolutely awesome. At this point, it produces pretty much a perfect 1:1 sound equivalent to a real MT-32 when listening to it. You'd need to analyze the waveforms to spot differences, and they're not audible to begin with. It can actually produce better sound than a real MT-32 if you tell it to, if you're not a purist 😀 It also emulates the analog parts of the MT-32 with its analog modelling. It's simply an amazing emulator.
