Coffee, black tea, Earl Grey tea, green tea ... but WAY too much coffee. 😀

Here lately, I've been on a "gourmet" ramen kick. Cheap run-of-the-mill beef ramen (and seasoning), 2 cups of water in a frying pan, teriyaki sauce, butter, chopped yellow onion, diced tomato, diced beef kielbasa sausage, and an egg. Mix it all together, cook until all water is gone then continue to fry for a few extra minutes. Comes out amazingly good.

Guys, The Drought is Over in California.
I purchased this half crate of Giant California Strawberries for $15 USD
These are the Best Strawberries I have seen and tasted in a long time.
They are so Ripe, Sweet, and Tasty. Full of Flavor.
The Grapes are Ripe too.
2025 is going to be a Good harvest year.
The wine makers said it’s going to be a very good year too.

Today I've put in some good workout in the gym and felt like I've earned the right for some fast food. I stopped at a Greek place on my way home and picked up a takeaway.

No pics, but I have changed some things in my diet for the better and actually really craving this healthier diet a lot.

I make homemade chicken or salmon jerky every weekend, then eat 1 ounce per day as a morning snack along with an ounce of roasted almonds.
I have a large salad for lunch with mixed greens, chopped carrots, chopped red onions, and a tablespoon each of balsamic vinegar and extra virgin olive oil. I will then have a small piece of protein (whatever leftovers my wife made for our weekly dinner).
For dinner, I have whatever my wife made. Usually a casserole or chicken enchiladas. She usually makes a dish that lasts us most of the week. I'm okay with eating the same thing every night for a week as long as it's good. She has a harder time and wants more variety.

I may post pics of my jerky making process later when I have more time.

The more I learn, the more I realize how much I don't know.

Here's a few pics of some jerky I've made. First three are beef, from cutting to marinating to finished product. Followed by chicken and salmon coming out of the dehydrator. This weekend I am making beef, chicken and catfish. After a year of making this every weekend, I've got the marinade down to a science and everyone who tries it says it's some of the best jerky they've ever tried. The only way I ever screw it up is if I dehydrate too long. Even then, it tastes great, it's just tougher to chew. I prefer my jerky slightly less cooked so that it is softer and easier to chew. And since I finish it within a week, there's no worries of spoilage. The more you dehydrate it, the longer it lasts. Salmon has the most amazing texture when dehydrated. The natural fish oil (Omega-3 fats) in salmon is retained and creates a buttery texture that almost melts in your mouth.
