Sorry for the dumb question, but I've done a few quick searches and probably have used the wrong search terms. I don't know the difference between what an open and closed header would be like.

When the header has its cap on it, is it considered open or closed? I assume it's the opposite for the other type then.

Correct, cap/jumper on=closed and without anything it's open.
The jumper connects the pins so "closed" comes from "closing the circuit"
