If you have a multilingual copy then there should be a language selection in the installer, the game's options or a config utility.

I don't know. Do you have an idea to change the language in Juiced?

You probably have an english only version of the game so you won't be able to select anything on install. You need a multilingual version of the game. They have, in the first CD, files "readme_eng.txt", "readme_fre.txt", "readme_ger.txt", "readme_ita.txt", "readme_spa.txt". If there's only one "readme.txt" it's an english only version of the game.
