I increased the resolution to 1024x768 using dosbox, but when I run doom, the only things that are 1024x768 is the stationary graphics, like the title screen, the status bar, and the end screen text, and the intermission screen.

The play area remains 320x200. So how do I change that to 1024x768? I know how it looks like because I used zdoom, and I want to play the original doom without any changes from the original formula, barring the change in resolution because the grainy graphics hurts my eyes, especially when I haven't been playing games with grainy graphics in a long while.

I think you cannot do that without a sourceport because resolution is hardcoded inside DOOM code.

8 GB DDR4 (2100)
8 GB GeForce GTX 1070 G1 Gaming (Gigabyte)

The resolution in the original Doom engine is fixed at 320x2?? and cannot be increased. Even Heretic and Hexen were the same. You *have* to use a source port if you want a higher resolution, so you may as well get one that is native to your OS.

There are a lot of good source ports out there, and a lot of them can be configured to be very true to the original - including DEHacked support and whatnot.
