I am playing the old Infocom games with my fiance. She like the colors different. Is there a way to change those? I tried the old dos command COLOR, but that does not work.

I usually use Frotz (More specifically WinFrotz) to play old Infocom games. It lets you do things like change the colors, increase the size of the font, etc, and is available on most platforms.
If it is one of the older Infocom games (i.e. not one of the last ones), try starting the game in DOSBox with the /W parameter added to the command line. For most of the games, that should get you the familiar grey-on-blue look with a red-on-grey status line.
