Well, it just means that you have to set the AGP timing values and features by yourself. Some combinations may be unstable.
Overall the gain from AGP is not as much as on 440BX f.e., but that is as expected. So AGP 1x is ok, but AGP 2x is not much faster.

About the EDO DIMM, check also the voltage! (There exist EDO and SDRAM DIMMs)
There are 3.3V and 5V DIMMs as well as SIMMs. If you have a board that allows to pair PS/2 SIMMs and SDRAM and both are plugged then both run at the same voltage, usually 5V then. This might result in the SDRAM running at a higher voltage then specified.

3dfx AGP cards should be ok on such a board since they don't use any of the unique features that AGP offers. For BX I'm not sure if the cards would perform worse with 1x, but for example setting AGP Command FIFO to 2x doesn't really make a practical difference even on a BX board.

I had no idea they made EDO and even FPM on DIMMs. It looks like it was commonly used in notebooks as 72-pin SO-DIMMs and more exotically on 168-pin DIMMs, same as SDRAM.

It makes a big difference.
Here I tested 64mb EDO and 128mb sdram.
Testing the quake 2 benchmark on a pentium mmx I ended with this result:
EDO test:15fps
SDRAM test:19fps
Mixed:16fps

Not so much socket 7 as it was budget class by this point but with the Pentium 2 LX you had to have SDR but sizes were small. 1998 everything had moved over to SDR as it was easier to install and was getting less expensive. The only builders that used SDR in 96 was mainly Gateway if they even used it but 97 that was all they used. VX sucked as far as using SDR was concerned and most boards had issues till TX came around.
