I accidentally did this. I immediately exited when I saw the warning text but now I see all these warnings online about how much damage that could do to my files. Is there any way to check if it deleted anything?

The only issue would be if you are running DOSBox as Administrator or the the files and subfolders on your real C:\ that your user account has permissions to and this would only be an issue if the program you launched in DOSBox either through a bug in the program or because it was scripted that way deleted or modified files on your real C:\.
Just mounting C: to C: in DOSBox won't cause any problems since DOSBox isn't the issue.
