I dug up another ES1688 card that differs from the one I have and I will play with it too. I have a few ideas for mods that I would like to try out. I wonder if the noise is the ES1688 chip or its implementation / lack of filtering.

I think the noise from the MPU-401 implementation is generated in the ES1688 chip itself.
The problem here is that this noise appears in the PCM/Voice signal path not in the Wavetable audio return, which is why I believe the source for it is in the chip itself.
Disabling the MPU-401 will eliminate the noise.

I know the Yamaha YMF71x card is completely silent with the Doom audio test.
