The sockets and pins on the ram seem to be identical. From memory it didn't matter, only EDO had to be used in pairs or something like that?

Would also like a way to identify which is which as I have a lot laying around.

Usually can't tell the difference. But you'll have to check datasheet of the memory chips or install them in a Pentium1 motherboard. As the bios usually reports what is installed. Usually FPM are rated 70 and sometimes 60ns. While EDO is usually 60/50ns.

You won't fry anything. On 486 you can only use FPM (only a few last gen boards take EDO). Pentium takes both. On a Pentium you have to install them in pairs.
