Do the YF724/744 chipsets work with i810 in the absence of PC/PCI? I am planning to replace an FM801 card with it in Windows 98SE specifically, will I get OPL3, SBPro and MIDI out of this card?

I assume it will work fine in Windows's DOS Box - with possibility of use its hardware midi as MPU401. In plain DOS probably your way to go is DSDMA - which is quite compatible. However you'll get only SBPro and OPl3 here (no MPU401).
It works this way with i865 (ICH5), so probably it will work with i810 (ICH2) as well.

It does, yeah 😀 The only game I've had issues with so far is Dune 2 - the intro cinematic digital speech does not work (it never does for me unless in real MS-DOS mode for some reason) and the game hangs when choosing a house and before the Mentat screen. I will look into it.
It does work in MS-DOS mode as well, but I can't seem to change its IRQ. YMFIRQ.EXE finds a YMF744 then quits with just "error". IRQ5 is unworkable for me, it's what my IDE RAID card works on.
