Everytime I put a game in fullscreen, the colors get really funkified and neon-ish. Can anyone tell me what's going on?

Are you running DOSBox under Windows?
What videocard do you have?
Are video card drivers up to date?
Is your desktop colour depth set to 24bit (DOSBox doesn't like this)?
What is your output= for DOSBox? Tried other options?
Do ALL your games behave in this same way?

Intel i7 5960X
Gigabye GA-X99-Gaming 5
8 GB DDR4 (2100)
8 GB GeForce GTX 1070 G1 Gaming (Gigabyte)

I'm going to answer these the best I can, but I'm computer illiterate, so bear with me.

Yes.

Intel(R) 82845G/GL/GE/PE/GV Graphics Controller (I have no idea what this means)

I have no idea. How would I update them if they aren't?

I just checked, and it's on 32 bit. It's also set on "High Color" as opposed to "True Color."

I have absolutely no idea. Do you mean the framerate/frame skip?

I've only tried about 5 of them, and they all perfom the same.

"High color" usually means 16 bit color depth, "True color" is either 24 or 32 bit. Set the color depth to "True color" and try again.
